My Molasses Wake-Up Call

Storage: The Thing Nobody Tells You
Molasses doesn't really go bad in the traditional sense, but it does change over time. Left in a cabinet that gets warm, it can start to crystallize a little around the cap, or thicken up so much it's a workout to pour. It slides right out instead of leaving a third of it stuck to the sides.
If you're weighing ingredients instead of measuring by volume — which I'd honestly recommend for anything sticky — molasses generally weighs about 20% more than water by volume, so a cup of molasses is heavier than a cup of milk. That matters if you're trying to get consistent results batch after batch, especially if you sell your baked goods and need every batch to taste the same as the last.
Substituting Molasses
Out of molasses and mid-recipe? You can make a rough substitute with dark brown sugar dissolved in a little hot water, though you'll lose some of that deep flavor and the moisture-holding properties won't be quite the same. It'll work in a pinch, but it's not a long-term fix if molasses is central to the recipe, like in gingerbread or shoofly pie.
